Crab Salad (2)
Ingredients

g
cooked white crab meat
a
handful
rocket leaves
1
good tomato
finely diced
1
spring onion
white part only, sliced
1/2-1
tbsp
lemon juice
2
tbsps
mild extra virgin olive oil
1
tbsps
freshly chopped flat leaf parsley
salt and black pepper
to taste
Instructions
Divide the crab meat between two plates and arrange the rocket, diced tomato and spring onion around it.
Whisk together the lemon juice, olive oil and some salt and pepper and dress the salad. Serve sprinkled with the parsley.
