Instructions
  1. Cut the potatoes into 5 cm chunks. Leave the skins on or peel as preferred.
  2. Bring a large saucepan of water to the boil. Add 1 tsp salt and the potatoes. Boil for about 12 minutes until they are soft. Drain and tip into a serving bowl.
  3. Now add all the remaining ingredients along with a good pinch of salt and a generous grind of black pepper.
