Gingery Hot Duck Salad (2)
Ingredients

duck breast

fish sauce
Juice of 1/2 lime & juice of 1/2 orange
or use juice of 1 Seville Orange in season

cayenne chilli
finely chopped

fresh ginger
grated
a few drops sesame oil

baby spinach, watercress or lambs lettuce
or a mixture
Instructions
Grill or fry the duck breast, skin side down initially, until it is cooked to juicy pinkness then set aside to rest.
In a bowl mix the fish sauce, lime and orange juice, chilli , ginger and sesame oil ( if using).
Pour any juices from the duck into the bowl then carve the meat into thin slices on the diagonal. Toss the sliced duck into the bowl and stir well.
Divide the salad leaves between two serving plates and tip over the duck.
