Greek Salad, Pelion Style (4)

cos lettuce
finely sliced
a
handful
chopped dill

carrots
scrubbed and grated
1
red pepper
finely sliced
1/4
small
red cabbage, finely sliced

handfuls
flat leaf parsley
a
handful
mint leaves
chopped

feta cheese

g
black olives
DRESSING:
6
tbsps
olive oil
2
plump garlic cloves
peeled and crushed
2
red chillies
finely chopped
juice of 2 lemons
1
tsp
dried oregano
sea salt and black pepper to taste
Instructions
Mix the lettuce and the dill in a salad bowl. Combine the grated carrot, pepper, cabbage, parley and mint and pile the mixture over the lettuce.
Add the feta cheese and olives. Mix together the dressing ingredients and pou on top.
