Jacket Potatoes with Pancetta and Gorgonzola (2)

  1. Fry the pancetta until its fat is golden using a little butter or oil if needed.
  2. Stir in the cream and cheese and leave to bubble gently over a moderate heat for a minute or two.
  3. Split the potatoes then spoon in dollops of the creamy sauce and serve with a spinach salad.
