Jacket Potatoes with Pancetta and Gorgonzola (2)
Ingredients

baked potatoes

g
pancetta, cubed
or use diced streaky bacon

g
double cream
100
g
gorgonzola, diced
Instructions
Fry the pancetta until its fat is golden using a little butter or oil if needed.
Stir in the cream and cheese and leave to bubble gently over a moderate heat for a minute or two.
Split the potatoes then spoon in dollops of the creamy sauce and serve with a spinach salad.
