Mango Salsa (2-3)
Ingredients

large
small ripe mangoes
1 “
piece fresh ginger
1
small
hot red chilli
deseeded and chopped
sea salt to taste
1
tbsp
chopped mint leaves
1
tsp
ground cumin
juice of a lime
Instructions
Peel the mangoes and cut the flesh into small dice, reserving the juice.
Grate the ginger finely and mix with the chopped chilli, mint and ground cumin.
Mix the seasonings gently with the mango. Add salt and squeeze in the lime juice.
Chill thoroughly before serving with grilled meat or fish.
