  1. Place the butter, soy sauce, garlic and coriander in a mini food processor and blitz until smooth. Spoon into a bowl then fold through the spring onions and chilli.
  2. Remove the stalks from the mushrooms, chop them up and fold them through the butter.
  3. Fill each mushroom with the butter mixture then grill for 8-10 minutes, or until cooked through.
