All in One Roast Sausages (2)
Ingredients

new or waxy potatoes
scrubbed

medium
red onions
4-5
plump garlic cloves

tbsps
olive oil
sea salt and black pepper

good quality lamb or pork sausages
Instructions
Preheat the oven to 200C Gas 6.
Cut the potatoes into chunky slices about 4 cm thick and peel and thickly slice the onions and garlic.
Put the vegetables in a medium sized roasting tin with 3 tbsps olive oil. Season with the salt and pepper and mix together well.
Roast for 20 minutes then turn the vegetables over. Put the sausages on top, turning to get a light coating of the oil.
Return to the oven and cook for 15 minutes more then turn the sausages over and cook for a final 15-20 minutes.
