freshly grated parmesan

free range eggs

butter
melted and cooled

milk
Instructions
Sift the flour with the baking powder and salt. Mix in the parmesan, semolina and pepper.
Make a well in the centre and pour in the butter, egg yolks and milk. Mix well to form a loose batter.
Whisk the egg whites stiffly, then fold into the mixture.
Line an 18cm cake tin with baking parchment. Pour in the mixture and bake at 190 C, 170 Fan Gas 5 for 30-35 minutes.
Cool for a few minutes then turn out on to a cake rack.
