Pea and Mint Pesto (4)
Ingredients

frozen peas

g
parmesan
grated
150
ml
olive oil
zest and juice of 1 lemon
50
g
toasted pine nuts
1
tbsp
freshly chopped mint
1
tbsp
freshly chopped basil
Instructions
Add the frozen peas to a food processor and pulse to break up – you want half of them a bit bashed and half fully broken down.
Transfer the peas to a large bowl and allow them to defrost.
Add the rest of the ingredients, season to taste and stir until combined.
