Red Cabbage, Beetroot and Date Salad (4)

raw beetroots
peeled and coarsely grated

red cabbage
finely sliced

Iranian or Medjool dates
pitted and roughly chopped

bunch parsley
finely chopped
For the dressing:

tbsps
extra virgin olive oil

tbsps
lemon juice

tsp
sea salt

tsp
black pepper
Instructions
Tip the beetroot into a large bowl, followed by the red cabbage, dates and parsley.
Whisk the dressing ingredients together in a small bowl. Just before serving drizzle over the salad and give it a good stir.
