Red Cabbage, Caraway and Chilli Salad (4)

red cabbage
core removed, cut in 5 cm chunks and finely shredded

tbsps
roughly chopped flat leaf parsley
3
tbsps
shredded mint
1
long red chilli
deseeded and finely chopped
2
tbsps
caraway seeds
roughly ground
Instructions
Whisk the lemon juice and oil together in a large bowl and season with salt and pepper.
Add the cabbage, herbs, red chilli and the caraway seeds then toss well. Check seasoning and serve.
