Red Cabbage with Apples

  1. Warm the olive oil in a thick bottomed deep pan.Add the onion and cook until golden and translucent.
  2. Add the cabbage, apples, vinegar,bay leaf and 4 tbsps water. Cook over a moderate heat, simmering gently, for about 20 minutes.
  3. Season with salt and pepper and serve when tender but still retaining some bite.
