Red Cabbage with Apples
Ingredients

olive oil

onion
peeled and finely sliced

lb
red cabbage
cored and finely shredded
1
apple
cored and cut in 1/2″ chunks

tbsps
red wine vinegar
1
fresh bay leaf
Instructions
Warm the olive oil in a thick bottomed deep pan.Add the onion and cook until golden and translucent.
Add the cabbage, apples, vinegar,bay leaf and 4 tbsps water. Cook over a moderate heat, simmering gently, for about 20 minutes.
Season with salt and pepper and serve when tender but still retaining some bite.
