Place a large heavy based frying pan over a medium heat and add the 1 dssp oil. When it is hot fry the sausages until nicely browned on all sides, then transfer to a plate with a draining spoon.
Add the onion, garlic and bacon to the pan and cook for about 10 minutes until the onions are starting to brown at the edges.
Meanwhile place a 4 pint casserole on another heat source and add the remaining oil. When hot, add the apple rings and fry for 2-3 minutes, turning, until browned on both sides.
Add the sausages,bacon, onion and garlic to the casserole. Sprinkle in the flour to soak up the juices, stirring with a wooden spoon.
Slowly add the cider and cider vinegar, stirring continuosly. Add the thyme,bay leaves and crushed juniper berries, then season to taste. Cover and simmer gently on the lowest heat for an hour.
