Ingredients

olive oil

cloves garlic, finely chopped

raw prawns, peeled

green or runner beans
blanched for 3-4 mins

oz
serrano ham
finely diced
sea salt and black pepper

eggs
beaten
Instructions
Heat oil in a non stick saucepan. Add the garlic and fry for 2-3 mins until golden.
Stir in the prawns and cook for 2-3 minutes until done.
Add the beans and the ham then season.
Stir in the eggs and cook, stirring until lightly scrambled. Serve immediately.
