  1. Place the skate wings in a large shallow pan and pour over enough cold water to just cover. Add the lime slices and leaves, garlic, chillies, ginger, spring onions and the lemongrass. Season with peppercorns and a little salt.
  2. Bring slowly to the boil over a medium heat. Turn the heat low to simmer very gently for 10-15 minutes until the fish is firm.
  3. Sprinkle with the fresh coriander leaves and soy sauce to taste.
  4. Serve in a soup bowl with some pf its poaching liquid and some bread.
