Soba Noodles with Black Beans and Broccoli (4)

  1. Bring a large pan of lightly salted water to a boil. Meanwhile, cut the broccoli into bite sized florets. In a sieve, rinse the douchi well to remove excess salt., then drain and finely chop. Combine all the ingredients for the dressing in a small bowl.
  2. When the water boils simmer the broccoli for 2 minutes, then remove using a slotted spoon. Add the noodles to the water and cook for a minute less than the time suggested on the packet. Drain into a sieve then rinse with cold water and toss with half of the oil.
  3. Heat the remaining oil in a large frying pan or wok. Fry the parboiled broccoli for 3-5 minutes, or until lightly browned in places. Add the spring onions, garlic, ginger and douchi then fry for a minute or two until the garlic no longer smells raw.
  4. Add the noodles and the dressing and cook over a high heat for a couple of minutes more, until everything is well combined and steaming hot. Serve immediately.
