Pour the soup into a large saucepan then add the stock powder and 500 ml water ( hot or cold). Heat the soup, stirring occasionally, then add the peas and french beans. Simmer, half covered, for 6-8 minutes.
Uncover and add the cannellini beans. Make sure the soup is still simmering then add the spinach and keep pushing down into the liquid. As soon as the spinach has wilted stir in the parsley, check seasoning and serve. If you are not trying to lose weight you can have the parmesan and bread too.
