Put the water on to boil in a large saucepan for the pasta. When boiling, add salt and cook the pasta according to packet instructions until al dente.
Meanwhile put the chilli, shallots, oil, lemon zest, vinegar, sugar and tomatoes in a large bowl. Season well with sea salt and freshly ground black pepper. Bash everything together with a pestle.
When the pasta is cooked drain well. Return to the pan and toss together with the tomato mixture and the burrata.
