Spaghetti, Cherry Tomatoes, Olives
Ingredients

mixed cherry tomatoes
halved
Handful of black olives
stoned
1
tbsp
red wine vinegar
1
clove
garlic
peeled & finely chopped
Small bunch basil leaves
picked
Small bunch marjoram leaves
picked

tbsps
extra virgin olive oil
200
g
spaghetti
sea salt and black pepper
Instructions
Squeeze the tomatoes with your hands in a large bowl to slightly mush them.
Mix in the olives, garlic and vinegar
Add torn basil and marjoram leaves, then stir in the olive oil.
Leave to rest while you cook the pasta in salted boiling water following packet instructions until al dente.
Drain the pasta and quickly toss with the tomatoes. Check seasoning and serve immediately.
