Spinach with Leeks (2)
Ingredients

tbsps
olive oil
2
leeks
trimmed, washed and finely sliced
7
oz
young spinach
washed and drained
sea salt and black pepper
Instructions
Heat the oil in a large frying pan and soften the leeks. As soon as they are tender add the spinach and seasoning.
Keep stirring for a further couple of minutes until the spinach has wilted.
Remove from the heat, tip off excess juice and serve immediately.
