  1. Peel the potatoes and cut into 2 cm dice. Put into a pan and cover with cold water. Add a good pich of salt. Bring to the boil and boil until tender.
  2. While the potatoes are cooking heat the butter in a small pan. When the butter has melted add the rest of the ingredients and saute over a moderate heat, stirring, until the garlic starts to colour. Remove from the heat.
  3. Once the potatoes are cooked drain well. Mash and stir in the flavoured butter. Check seasoning and serve immediately.
