Sweet Potatoes with Sultanas (6)
Ingredients

sweet potatoes
Peeled and cut into 2 ” pieces
sea salt and black pepper
75
g
butter
1/2
tsp
ground ginger
1
tsp
ground cinnamon
2
tbsps
raisins or sultanas
soaked in water for 15 minutes
Instructions
Boil the sweet potatoes in salted water for 15 minutes until soft. Drain well then mash with a fork.
Add the butter, salt and pepper, ginger and cinnamon and beat well. Add the drained raisins or sultanas, mix well and serve.
