Szechuan Smashed Cucumber (2)
Ingredients

Cucumber
1/2
tsp
black rice vinegar
1/2
tsp
salt

tbsps
chilli oil
1
tbsp
garlic
finely chopped
1
pinch
ground roasted szechuan pepper
1/2
tsp
caster sugar
2
tsps
light soy sauce
Instructions
Lay the cucumber on a chopping board and smack it hard a few times with a rolling pin then cut it lenthways into four pieces.
Holding your knife at an angle to the chopping board cut the cucumber on the diagonal into 1 cm slices.
Place in a bowl with the salt and mix well. Set aside for 10 minutes.
Meanwhile combine all the other ingredients in a small bowl.
Drain the cucumber then pour over the sauce, stir well and serve immediately.
