Tomato and Courgette Bake (4)
Ingredients

medium tomatoes
sliced

large courgettes
sliced

tbsp
mixed herbs

tbsp
grated cheese
coarsely ground black pepper
small tub natural yoghurt
2
large eggs
2
tbsp
butter
1
clove garlic
2
tbsp
wholemeal breadcrumbs
Instructions
Arrange alternate layers of tomato and courgettes in a butter dish.
Sprinkle over the herbs, cheese and black pepper.
Beat together the yoghurt and eggs and pour over the vegetable mixture.
Melt the butter and saute the garlic till golden, then add the breadcrumbs and cook for 1-2 minutes.
Sprinkle the breadcrumbs over the vegetables and cook in a preheated oven at 180 C for 30-40 minutes until the topping is crisp.
