Watermelon, Halloumi and Mint Salad (4)
Ingredients

halloumi
cut in slices 1 cm thick
1
small
sweet ripe watermelon
cut into pieces
seeds from a pomegranate
4
tbsps
extra virgin olive oil
2
tbsps
pomegranate molasses
1
handful
fresh mint leaves
Instructions
Heat a chargrill pan on a medium heat and grill the halloumi slices for 2 minutes on each side.
In a large bowl toss the watermelon , grilled cheese and pomegranate seeds with the olive oil and 1 tbsp of the pomegranate molasses.
Transfer to a large serving dish , sprinkle with the mint leaves and drizzle with the remaining pomegranate molasses.
