Ingredients
- 2 tbsps olive oil
- 1 small onion peeled and finely sliced
- 1 lb red cabbage cored and finely shredded
- 1 apple cored and cut in 1/2" chunks
- 2 tbsps red wine vinegar
- 1 fresh bay leaf

Instructions
- Warm the olive oil in a thick bottomed deep pan.Add the onion and cook until golden and translucent.
- Add the cabbage, apples, vinegar,bay leaf and 4 tbsps water. Cook over a moderate heat, simmering gently, for about 20 minutes.
- Season with salt and pepper and serve when tender but still retaining some bite.
