Another favourite pudding from ” Cook Simple” by Diana Henry. You can use any sweet bread or fruit loaf to make the crumbs for this. Serve with whipped cream or ice cream.
Ingredients
- 225 g light-brown sugar
- 1/2 tsp ground mixed spice
- 1/2 tsp ground ginger
- 100 g stale plain cake or brioche crumbs
- 85 g butter, melted plus extra for greasing
- 500 g rhubarb trimmed and cut into 2 cm lengths
- 2 cooking apples peeled, cored and thinly sliced
- 4 tbsps orange juice

- Mix the sugar and spices together. Put 3 tbsps into the crumbs and stir in the melted butter. Toss the fruit with the rest of the sugar and spice mix.
- Butter a shallow pie dish and spread half the crumbs in the base. Pile the fruit on top and pour in the juice.
- Put the rest of the crumbs on top and bake, loosely covered with foil,for 20 mins in an oven preheated to 180 C, 160 Fan, gas 4. Remove the foil and bake for another 20 minutes until golden.
