  1. Preheat the oven to 190 C gas 5.
  2. Toss the prepared vegetables with the olive oil, sage and seasoning. Place in a large gratin dish, cover with foil and bake in the preheated oven for 30 minutes, then remove the foil. Bake for a further 20 minutes until the vegetables are soft and lightly browned.
  3. Season with the balsamic vinegar and serve with lots of freshly chopped parsley.
