Ingredients
- 2 red onions peeled,sliced and seperated into thick rings
- 2 carrots cut into short batons
- 2 parsnips cored and cut into batons
- 4 tbsps olive oil finely chopped
- 6 sage leaves
- sea salt and freshly ground black pepper
- 2 tbsps balsamic vinegar
- 2 tbsps finely chopped parley.

Instructions
- Preheat the oven to 190 C gas 5.
- Toss the prepared vegetables with the olive oil, sage and seasoning. Place in a large gratin dish, cover with foil and bake in the preheated oven for 30 minutes, then remove the foil. Bake for a further 20 minutes until the vegetables are soft and lightly browned.
- Season with the balsamic vinegar and serve with lots of freshly chopped parsley.
