If you are not so keen on boiled brussels sprouts this makes a great alternative to serve with your Christmas or Thanksgiving Turkey.
Ingredients
- 400 g butternut squash peeled and cut into 2cm chunks
- 300 g brussels sprouts peeled and cut in half
- 2 tbsps olive oil
- 1 large red chilli deseeded and finely chopped
- 1 plump garlic clove peeled and finely chopped
- 10 fresh sage leaves chopped
- sea salt and black pepper

Instructions
- Preheat the oven to 180 C gas Mark 4.
- Toss the butternut squash and the sprouts in the olive oil and season well. Tip into an oven dish and bake for 40-50 minutes until the vegetables are almost cooked.
- Remove from the oven and add the garlic, chilli and sage leaves and mix well. Return to the oven for 5-10 minutes before serving immediately.
