One of my favourite versions of the Malaysian salad known as Rojak, this is from ” Malaysian Cookery” by Rafi Fernandez 1985.
Ingredients
- 5 oz sweet potato steamed, peeled and sliced
- 1/2 Cucumber sliced thickly
- 1/2 fresh pineapple sliced thickly
- 1 turnip sliced
- 1 fresh mango sliced
- 6 oz chinese cabbage blanched
- 1 packet fried tofu
SAUCE
- 4 fresh red chillies deseeded
- 2 tbsps palm sugar
- 3 oz roasted peanuts coarsely ground
- juice of 2 lemons
- 1 tbsps tamarind juice
- salt to taste

Instructions
- First make the sauce. Pond the chillies in a pestle and mortar then combine with all the other sauce ingredients in a mixing bowl.
- Add the vegetables and toss all together before serving immediately.
