Ingredients
- 4 tbsps sunflower oil
- 6 plump pork butchers sausages
- 250 g padron peppers
- 150 g cherry tomatoes

Instructions
- Over a low to moderate heat warm the oil then add the sausages. Cook slowly, turning often to brown evenly. After 7-10 minutes when the sausages are just starting to brown add the padron peppers and stir.
- Partially cover with a lid and cook, turning as necessary. After about 15 minutes add the tomatoes, then continue cooking for about 15 mins more before serving straight away.
