Ingredients
- 2 tbsps olive oil
- 2 cloves garlic, finely chopped
- 6 oz raw prawns, peeled
- 4 oz green or runner beans blanched for 3-4 mins
- 2 oz serrano ham finely diced
- sea salt and black pepper
- 6 eggs beaten

Instructions
- Heat oil in a non stick saucepan. Add the garlic and fry for 2-3 mins until golden.
- Stir in the prawns and cook for 2-3 minutes until done.
- Add the beans and the ham then season.
- Stir in the eggs and cook, stirring until lightly scrambled. Serve immediately.
