This recipe from ” Moro The Cookbook” goes well with some fried potatoes and a rocket salad. You can substitute Monkfish as an alternative to skate and the sauce can also be used with lamb.
Ingredients
- 4 x 250g skate wings
- 4 tbsps olive oil
- 1/2-1 tsp sweet smoked spanish paprika
- 1 lemon quartered
- sea salt and black pepper
SAUCE
- 5 plump garlic cloves peeled
- 3 tbsps olive oil
- 6 tbsps good sherry vinegar
- a pinch sweet smoked spanish paprika
- sea salt and black pepper

- Preheat the oven to 220 C, Gas 7.
- Slice each garlic clove lengthways and then slice each slice lengthways again to make thin matchsticks. Heat the olive oil in a small saucepan over a low to medium heat. Fry the garlic until it is a dark nutty brown in colour but be careful not to burn it.
- Add the vinegar and a pinch of paprika. bring to the boil and reduce by half. Season with salt and pepper.
- Heat a large metal roasting tin on the hob until very hot. Season the skate with salt and pepper on both sides. Drizzle the olive oil into the pan to cover the bottom and gently ease each wing into the pan, shaking to prevent the skate from sticking.
- Put into the oven for about 10 minutes depending on the thickness of the wing, or until cooked through.
- Remove and serve immediately with the warmed sauce spoons over the fish and a sprinkling of paprika.
