A quick recipe from Nigel Slater’s ” The 30 Minute Cook”.
Ingredients
- 2 skate wings
- a lime thinly sliced
- 2 kaffir lime leaves
- 2 plump cloves garlic squeezed flat
- 2 hot red chilli peppers
- 1 inch ginger peeled and cut into coins
- 2 spring onions trimmed and chopped
- 1 stalk lemongrass bruised
- 8 black peppercorns
- chopped fresh coriander leaves
- dark soy sauce

- Place the skate wings in a large shallow pan and pour over enough cold water to just cover. Add the lime slices and leaves, garlic, chillies, ginger, spring onions and the lemongrass. Season with peppercorns and a little salt.
- Bring slowly to the boil over a medium heat. Turn the heat low to simmer very gently for 10-15 minutes until the fish is firm.
- Sprinkle with the fresh coriander leaves and soy sauce to taste.
- Serve in a soup bowl with some pf its poaching liquid and some bread.
