An easy noodle dish from ” Cook as You Are” by Ruby Tandoh.
Ingredients
- salt to taste
- 1 large broccoli head or 2 small ones
- 8 spring onions trimmed and thinly sliced
- 6 cm piece ginger peeled and grated
- 4 garlic cloves peeled and crushed
- 3 tbsps douchi ( fermented black soybeans)
- 250 g soba noodles
- 2 tbsps olive or vegetable oil
For the Dressing:
- 2 tbsps light soy sauce
- 1 tbsp white wine or rice vinegar
- 2 tsps caster or granulated sugar
- 1/2- 1 tsp chilli flakes to taste
- a splash sesame oil

- Bring a large pan of lightly salted water to a boil. Meanwhile, cut the broccoli into bite sized florets. In a sieve, rinse the douchi well to remove excess salt., then drain and finely chop. Combine all the ingredients for the dressing in a small bowl.
- When the water boils simmer the broccoli for 2 minutes, then remove using a slotted spoon. Add the noodles to the water and cook for a minute less than the time suggested on the packet. Drain into a sieve then rinse with cold water and toss with half of the oil.
- Heat the remaining oil in a large frying pan or wok. Fry the parboiled broccoli for 3-5 minutes, or until lightly browned in places. Add the spring onions, garlic, ginger and douchi then fry for a minute or two until the garlic no longer smells raw.
- Add the noodles and the dressing and cook over a high heat for a couple of minutes more, until everything is well combined and steaming hot. Serve immediately.
