A drink made from Licorice root which tastes sweet and sour at the same time. This recipe is from ” Sumac” by Anas Atassi.
Ingredients
- 50 g licorice coarsely ground with a pestle and mortar
- 1/2 tsp bicarbonate of soda
- 4 tbsps water plus 1 litre water
- 1/2 tsp orange blossom water
- Ice Cubes to serve

Instructions
- Rub the licorice, bicarbonate of soda and the 4 tbsps of water in a bowl for a couple of minutes with your fingers. Cover and set aside for an hour.
- Tip the contents of the bowl into a double or triple layer of muslin about 15 x 20 cm. Twit the cloth and knot to make a sort of teabag.
- Hang the bag in a pitcher with the 1 litre water. Swish around for 3 minutes in and out of the water to release as much flavour from the licorice as possible.
- Add the orange blossom water and serve cold over ice.
