Ingredients
- 200 g spaghetti
- 1 red chilli,deseeded and finely chopped
- 2 shallots,finely diced
- 1 tbsp extra virgin olive oil
- Zest of 1 lemon
- 1 tbsp red wine vinegar
- 2 tsps caster sugar
- 300 g ripe tomatoes, diced
- 125 g burrata, torn in pieces
- 1 handful fresh basil leaves torn

Instructions
- Put the water on to boil in a large saucepan for the pasta. When boiling, add salt and cook the pasta according to packet instructions until al dente.
- Meanwhile put the chilli, shallots, oil, lemon zest, vinegar, sugar and tomatoes in a large bowl. Season well with sea salt and freshly ground black pepper. Bash everything together with a pestle.
- When the pasta is cooked drain well. Return to the pan and toss together with the tomato mixture and the burrata.
- Scatter over the basil and serve straight away.
