Carrots Moroccan style- great with couscous and lamb!
Ingredients
- 1 kg baby carrots
- 1/2 tsp ground cinnamon
- 2 cloves cloves garlic finely sliced
- 1 tbsp honey
- 1/4 cup olive oil
- 1 tsp ground cumin
- juice of half a lemon

Instructions
- Preheat oven to 200 C or 180 C if a fan oven.
- Toss the carrots in a bowl with all the other ingredients to mix well and tip into a roasting pan large enough to take the carrots in a single layer.
- Roast, turning often, for 30-40 minutes until browned and tender.
- Serve hot, warm or at room temperature depending on the type of food you are serving them with,
