Ingredients
- 2 tbsps olive oil
- 2 leeks trimmed, washed and finely sliced
- 7 oz young spinach washed and drained
- sea salt and black pepper

Instructions
- Heat the oil in a large frying pan and soften the leeks. As soon as they are tender add the spinach and seasoning.
- Keep stirring for a further couple of minutes until the spinach has wilted.
- Remove from the heat, tip off excess juice and serve immediately.
