I love spinach and could eat it everyday so for other fans here is another recipe from “Madhur Jaffrey’s Indian Cookery”. This can be served as a side dish alongside meat or as part of a vegetarian thali.
Ingredients
- 2 lb fresh young spinach washed and drained
- 4 oz onions peeled and finely chopped
- 4 tbsps groundnut oil
- 1 fresh hot green chilli deseeded and finely chopped
- 1 tsp finely grated ginger
- 1 tsp sea salt
- 1/2 tsp sugar
- 4 fl oz water
- 1/4 tsp garam masala

- Heat the oil in a large saucepan over a medium high heat. When hot add the onions. Fry, stirring, for about 3 minutes.
- Add the spinach, chilli, ginger, salt and sugar. Stir and cook for 5 minutes.
- Add the water and bring to a simmer. Cover tightly, turn heat to low and cook for about 10 minutes then uncover and boil away some of the excess liquid.
- To serve sprinkle with the garam masala and mix well.
