Ingredients
- 3 tbsps groundnut oil
- 4 plump cloves garlic peeled and finely chopped
- 4 banana shallots, finely sliced
- 2-3 fresh red chillies deseeded and finely chopped
- 1" fresh galangal or ginger peeled and finely chopped
- 500 g minced free range chicken
- 1 handful fresh basil leaves roughly torn
- 1 tbsp thai fish sauce
- 2 tsps palm sugar

Instructions
- Heat the oil in a wok over a high heat until smoking, then add the garlic, shallots, chillies and ginger or galangal. Stir fry until the garlic is lightly browned.
- Add the chicken and fry, breaking up lumps, until it is opaque and cooked through.
- Add the basil, stir to mix, then add the fish sauce and sugar. Stir again for a minute or so to mix well.
- Serve with some steamed rice.
