This is from ” Madhur Jaffrey’s Ultimate Curry Bible”.
Ingredients
- 340 g french beans cut into 1 inch pieces
- 1 tbsp groundnut or olive oil
- a pinch ground asafetida
- 1 tsp black mustard seeds
- 1/2 tsp urad dal
- 2 dried hot red chillies
- 8-10 fresh curry leaves
- 1 1/2 tsps lemon juice
- 1/2 tsp cayenne pepper

Instructions
- Bring 3 1/2 pints of water to a rolling boil. Add 1 tsp salt and the beans. Boil rapidly for about 4 minutes or until the beans are just cooked through. Drain and rinse under cold running water, then drain again. Set aside.
- Just before serving pour the oil into a frying pan over a medium high heat. When the oil is hot put in the asafetida, mustard seeds, urad dal and chillies. As soon as the mustard seeds pop and the dal turns reddish put in the curry leaves and then the beans. Turn off the heat, then toss the beans and mix well.
- Add the lemon juice, cayenne pepper and a good pinch of salt. Mix again. If the beans are not at the right temperature warm through over a low heat.
