This is from ” Sophie’s Table” by Sophie Grigson.
Ingredients
- 1 lb sweet potatoes peeled and cut into small chips 3 inches long by 1/2 inch thick.
- 5 tbsps light olive oil
- sea salt and black pepper

Instructions
- Parboil the chips in salted water for 3 mins and drain well. Put into a large bowl and pour over the oil. Turn carefully to coat well.
- Spread the potatoes in a single layer in a roasting tin. Bake in a hot oven 220 c Gas 7, turning occasionally , until the outside is nicely brown and caramalised. This may take up to 40 minutes.
