A spicy Moroccan recipe from Claudia Roden.
Ingredients
- 1 kg sweet potatoes Peeled and cut into 2 " pieces
- sea salt and black pepper
- 75 g butter
- 1/2 tsp ground ginger
- 1 tsp ground cinnamon
- 2 tbsps raisins or sultanas soaked in water for 15 minutes

Instructions
- Boil the sweet potatoes in salted water for 15 minutes until soft. Drain well then mash with a fork.
- Add the butter, salt and pepper, ginger and cinnamon and beat well. Add the drained raisins or sultanas, mix well and serve.
