This is a Fuschia Dunlop recipe to serve as a side dish.
Ingredients
- 1 300g Cucumber
- 1/2 tsp black rice vinegar
- 1/2 tsp salt
- 2 tbsps chilli oil
- 1 tbsp garlic finely chopped
- 1 pinch ground roasted szechuan pepper
- 1/2 tsp caster sugar
- 2 tsps light soy sauce

Instructions
- Lay the cucumber on a chopping board and smack it hard a few times with a rolling pin then cut it lenthways into four pieces.
- Holding your knife at an angle to the chopping board cut the cucumber on the diagonal into 1 cm slices.
- Place in a bowl with the salt and mix well. Set aside for 10 minutes.
- Meanwhile combine all the other ingredients in a small bowl.
- Drain the cucumber then pour over the sauce, stir well and serve immediately.
