A delicious snack and a great way to incorporate more oily fish into your diet from Nigel Slater’s ” Real Food”.
Ingredients
- 4 slices hot brown toast
- butter
- Worcestershire sauce
- 2 smoked mackerel fillets skinned and roughly mashed
- 1- 11/2 cups grated cheddar cheese
- 2 tbsps double cream

Instructions
- Spread the toast generously with butter and shake over a few drops of Worcestershire sauce. Stir the smoked mackerel fillets together with the cheese and cream. Add more cream if needed to make a creamy paste.
- Divide the mixture between two pieces of toast and flash under a heated grill until it starts to bubble. Top with the other two slices of toast. Cut each sandwich into four and eat immediately.
