A spicy tomato rich stir fry from ” Dominique’s Kitchen” by Dominique Woolf. She also has a new book out called ” The Asian Pantry” which I have added to my wish list. This is good accompanied with her Garlicky Green Beans.
Ingredients
For the Sauce:
- 1 tbsp tomato puree
- 1 tbsp rice vinegar
- 1 tbsp Sriracha
- 1 tbsp light soy sauce
- 1 tbsp honey
- 5 tbsps water
For the stir-fry:
- neutral oil for frying
- 1 x 250g block halloumi cut into bite sized pieces
- 1 onion finely sliced
- 4 cloves garlic crushed
- 1 red chilli deseeded and finely chopped
- 1 red pepper sliced
- 2 tomatoes chopped
To serve:
- coriander leaves optional
- rice

Instructions
- To make the sauce combine all the ingredients and set aside.
- Heat a drizzle of oil in a large non stick frying pan or wok over a medium heat. Add the halloumi and fry for 4-5 minutes, turning occasionally, until golden all over. Remove and wipe out the pan.
- Add another tbsp oil and fry the onion, garlic and chilli for 5 minutes, stirring occasionally until softened. Add the red pepper and tomatoes and stir fry for 2-3 minutes.
- Pour in the sauce, then turn down the heat slightly and gently bubble for a couple of minutes.
- Return the halloumi to the pan an coat with the sauce. Cook for a couple of minutes more to warm through, loosening with a splash of water if needed.
- Serve immediately topped with the coriander ( if using) and with rice and garlicky green beans.
