Ingredients
- 6 medium tomatoes sliced
- 3 large courgettes sliced
- 1 tbsp mixed herbs
- 4 tbsp grated cheese
- coarsely ground black pepper
- small tub natural yoghurt
- 2 large eggs
- 2 tbsp butter
- 1 clove garlic
- 2 tbsp wholemeal breadcrumbs

Instructions
- Arrange alternate layers of tomato and courgettes in a butter dish.
- Sprinkle over the herbs, cheese and black pepper.
- Beat together the yoghurt and eggs and pour over the vegetable mixture.
- Melt the butter and saute the garlic till golden, then add the breadcrumbs and cook for 1-2 minutes.
- Sprinkle the breadcrumbs over the vegetables and cook in a preheated oven at 180 C for 30-40 minutes until the topping is crisp.
