A rich and squidgy cake which provides a good hit of iron from Xanthe Clay.
Ingredients
- 125 g flour
- 4 tbsp cocoa powder
- ¾ tsp bicarbonate of soda
- Pinch of salt
- 100 g caster sugar
- 3 tbsp black treacle mixed with 120ml hot water
- 4 tbsp vegetable oil
- 100 g ready-to-eat prunes finely chopped

Instructions
- Line a 500g loaf tin with baking parchment and preheat the oven to 180C/160C fan/gas mark 4.
- Stir together the flour, cocoa powder, bicarb, salt and sugar. Mix the treacle water, vegetable oil and prunes. Stir together the two mixtures and pour into the prepared tin.
- Bake for 35 minutes, until a skewer inserted in the middle comes out clean. Cool in the tin.
